Professional rowing (1v1 races) died out in the 1920s due to match fixing.  Other sports filled the spectator niche pretty quickly.

I remember reading about some gambling crime kingpin in Singapore fixing out-of-the-way ~5th level regional tennis tournaments all over Eurasia for great profit.  I can't even imagine people willing to bet money on low-level professional tennis, but here we are.

I mean, some of the sports I cited, I didn't even know existed.  Others, I would have never guessed there would be match fixing in triathlons, to give but one example.  And yet, as you put it, here we are.
