The lovely Lynsi, along with her brother, own the company outright. Bought out minor family members some years ago. Inter sting factoid: the founders built there home on a private street behind our house. Very private. We only knew because my dad had to sign off on the private road (they needed a very small easement along our 11 acre boundary. Knowing my dad, they paid for it.

The West Coast's favorite fast food chain. I'll say.
My sons and I used to stop at the Kettleman's City In-N-Out during the return drive of our quarterly trips to Southern California volleyball tournaments. They were usually ousted early in gold round on the last day, so we'd hit the KC In N Out by around 1:00 and load up on burgers. Great memories.
I moved out to Detroit a year ago. We had a big event with a number of private equity types in Laguna Niguel in March, and our Detroit-based partner (who'd been to this event many years in a row) told us that a highlight for him was the In N Out burgers that they served at this event. Based on the burgers I've had in Detroit, I'd say he's right as rain on that score.
Finally, my family and I once had a horrible meal at a Chili's, now owned by Brinker's. When my wife and I were dating in the early 1980s, you used to have to wait an hour to get a seat. Brinker's squeezed the fun and flavor out of the place. It just makes me sad now. Anyway, they completely screwed up both the first meal and the replacement meal. I paid for the meals, put the family in the car, headed down the road to In N Out and for $25 had a great meeal for four.Â
I sent the receipts to the head of Brinker's and Esther Snyder, Lynsi's grandmother. I got a letter of thanks from Esther (by the look of it typed by her) and a form letter of apology from the Brinker's muck de muck. Received $50 in coupons from In N Out and $75 in Chile's coupons from Brinker.
I used the In N Out coupons that night. I still have the Chile's coupons.

Tis true. I've been back to Boston a couple of times since, but I didn't have time to get actual seafood (either driving to Worcester or umpiring the Head of the Charles, very time consuming).
In-N-Out is a hit in Texas, btw. Two locations in the DFW metro area and one in Austin, iirc.

Well I'm in the east coast this week and had a chance at shake shack. It was very good, but I'm not sure if it's worth the hype. The burgers were similar to In-N-Out; the bun, which was a soft brioche type bun, was better, and the fries, which were cut with a bit of a cringle, gave you a better surface area to volune ratio. Still, it hardly blew me away, so I'm not sure its outsized reputation was deserved. The salted caramel milkshake was quite good, though.

Shake Shack remains primarily a NYC thing. You have to realize that while there's lots of good food generally in NY, it's not easy to find a decent burger under $20. There was a big space to move into and they did it pretty well.
Personally I like the burgers and shakes, not so much the fries. My seven year old thinks its the height of gourmet.

Shake Shack did have a run of very good fries for about 6 months, maybe a year ago. But then they changed back to the crinkle cut, so now I think they're back to being just ok.
In my mind In-n-out and Shake Shack are in different categories, but both great. I think Shake Shack will do pretty well here in LA when they open.

Anyway, there's a Shake Shack in Austin now. And there's a place in Austin called Via 313 pizza that serves decent "Detroit-style" pizza. I'm unclear on what Detroit brings to the pizza game, so I'm off to Wikipedia now.

The funny thing is this. Many pizza ovens in Italy are wood fired but the smoke never reaches the pizza. Many families I have stayed with have pizza ovens in the yard, made of stone or brick. There is a firebox below and an oven above, open in the front. The heat is intense. We have also cooked chicken in them, sauces, etc. no smoke flavor, just extreme, rapid heat. Gotta watch the chicken. Italian pizza don't taste so smoke. Wood fired doesn't matter as long as the heat is extreme.

That's my local pizza joint. They come by my coffee shop most Tuesdays. Note the wood under the oven. They do sometimes add stuff on the pizza, by 90% of the time I get the margherita, with extra basil.
