That's not quite what he's doing.
He looks at returning rush yards, returning receiving yards, returning passing yards.
So, McCaffrey is accounted for - assuming no mistakes.
He then correlates these things with S&P+ numbers the ensuing season.
It's probably true that returning rushing yards matter more for a primarily running team, but trying to account for the particulars of each team would wipe out the statistcal nature of the statistics.
