My mistake, I was thinking of Bill Toomey, who I now see is listed as a Stanford Olympian on the gostanford site. He competed in track and field as an undergrad for Colorado and then received a Master's degree in Education from Stanford. By my criteria he doesn't really qualify but looking at USC and UCLA's list of medal winners they have athletes with much more tenuous connections.
