Umami burger was indeed great when it first came out, but I suspect the nationwide expansion has diluted the owner/creator's energies and focus, with commensurate dilution of quality.

I noticed the same thing when Momofuku opened in DC -- also pretty bland in comparison to the NYC mothership.
