Besides Sarell and Little, is it unreasonable to expect fellow frosh Parkinson (TE), St. Brown (WR) and Wedington (RB?, KR?) to produce a few big-gainers?

Sadly, probably it is. Early in the season, it is improbable that they will know enough of the offense to get them on the field, especially given the tendency of the coaching staff to redshirt freshmen. If we get past USC and UCLA, it will be "if it ain't broke, don't fix it". If we don't, why burn a redshirt for a non-contending year? Also, I think the staff would tell you that Irwin and Arcega-Whiteside are "good enough". And they may be, if we can run reliably and protect the QB at least fairly well. It is always possible that one (or more) of the freshman receivers is so good they can't keep him on the bench. But that will take a LOT of convincing to make happen.
