Put it another way: Stanford doesn't get the recruits Texas wants. As it turns out, Texas has so many good players that many of the players Texas doesn't want turn out to be really good players...But still, ideally, you'd want to take some of those players Texas wants. Not that that's likely to happen (I think Texas has only lost one player to another school that it offered this year?).
