I was wondering the same thing and also went to GoStanford.com to get the answer. The wide receiver coach is Pep Hamilton. Oddly enough, wherever the coaches and their responsibilities are listed, wide receiver is omitted, with the exception of one obscure page.
I don't know how long Pep has been the wide receiver coach or which receivers he has mentored. Perhaps someone else can tell us.
