Make sure that you take the longer of the two tours that are offered at West Point.  It will be well worth your time.  Along with a stop at Hyde Park, that was the highlight of our trip up the Hudson Valley some years ago....

Also, I think the stadium there is the most beautifully situated stadium in America.  Right alongside the Hudson, the view is truly remarkable in he Fall.
