You might be confusing Joe with Eddie Collins, who played about 25 years beginning right after the turn of the century. Joe was a journeyman first baseman and pretty decent left-handed hitter for the Yankees in the 50s:

His stance was actually similar in some respects to Musial's.....crouched, ready to spring. However, the unique thing about Collins' stance was his laying of the bat almost straight down his back, as if he were using it to scratch his rear end. I wish YouTube were of some help here. It was very odd and just perfect for 10-year-old boys to obsess about.
