My great aunt (UCB '68) claimed that her name was carved into one of the tables there. My frequent visits were made in the name of family research. Never found it.

I was a Dutch Goose fan until last year when I went there to watch a Stanford away game and found the outside back bar loaded with Weenie fans and not a single TV tuned to the Stanford game

Which game? While seats are hard to find, I've found it's usually at least 50% Stanford fans for major away games, if not more. (As for the rest, a smattering of other college fans, or just folks from the neighborhood there for a meal.) Granted it might depend on the game, the USC/UCLA and other major rival games likely have more interest and better numbers than, say, OSU or WSU.

BTW, I have been to the Dutch Goose in Boise and felt it didn't hold a candle to the Menlo Park version.

In any case, the changes went far beyond accessibility improvements. The back area is now completely different and is larger. I think the remodel was at least partially to increase capacity. the "Chalet" was the "addition"
in its new spiffed variation, I think the Goose lost a bit of its gritty soul. I still make the pilgrimage back when I am on or near campus. eggs are still hit or miss, but overseas travel is good training for Goose fare.

I'm fairly certain the Dutch Goose, or The Goose was sold a 5-7 years ago. Someone did sue or threaten to sue for wheelchair access and the remodel was started to rectify that issue and the second floor office was added. The front still retains much of it's original charm/character, but the old, carved up tables and booths (my name was there from the 80's) were replaced. There is now a wheelchair elevator in the rear entrance hall that breaks things up. The newer outside patio bar has become quite popular, although I'm usually in the backroom for a little league, volleyball or middle school basketball team celebration. As expected, it is very much a Menlo Park neighborhood bar as well as a spot for Stanford students later in the evening.
As for Weenies taking over, there are just too damn many of them around here, so it's more a question of numbers. As usual, they wear their bear on their sleeves a little too much - the thin envelope tends to make them bitter, let alone their very poor track record over the last few decades in most things save the club sport.
