Maybe it's all some sort of optical illusion.  Used to be a 275 lb.  OT  could do just fine. Now they're coming in from HS over that weight.    Back then, center Jon Sande played at just over 215-220. (Still the job he did on tOSU's nose guard Jim Stillwagon was a work of art)

The dentist my son used to go to was an offensive lineman under Walsh I. He's a big guy -- for a dentist -- but one time I commented to him that the then-current offensive line at Stanford would consider him lunch. (I think this was the early 90s when Stanford's offensive line was the biggest in D-1 -- at weights that would now be pretty average.) Dr. Stephens smiled and said, "yeah, they're bigger now, but let's put it this way: WE protected our quarterback." (They allowed many fewer sacks in 1977 than the early 90s teams.)  I think he played at about 245, though that may be too low.
