That's not really what Oregon is doing anymore, it was Oregon under Chip Kelly.
And, while they had different boards each with four cartoons, in fact they ran very few plays out of very few formations. The idea was to sacrifice complexity - of plays, of formations - for speed. Presnap reads were replaced by in-play reads. It didn't matter if the defense knew what play was coming if you altered it depending upon how the defense reacted, i.e. the zone read, etc.

There may have been a time when you could take the Nation's #1 QB recruit and spend 2 or 3 years teaching him your offensive scheme, but those days are long gone. Shaw's system squanders talent and eligibility; makes injuries insurmountable; essentially precludes inbound transfers; and has produced consistently worse teams year after year. He needs to adapt to survive. It's what good coaches do.
At this point I am not sure I can identify anything in particular that is "Shaw's offense".
Stanford's offense under Shaw keeps changing rather a lot, though I fear more by happenstance than design. There have been a couple of iterations of run heavy to pass heavy. The type of run/blocking game has gone through at least three major iterations (going from man-scheme, to zone, to duo, to non-existent). The type of pass game has bopped around all over the place from featuring short dumps and crossing routes, to attacking deep go-routes, to back shoulder and jump balls, ...
That change, undirected, has been a good chunk of the problem.
There are a few things that have stayed constant, though these were mostly both Harbaugh and Shaw things: Stanford huddles. Stanford usually runs the play clock to zero. Stanford changes personnel and personnel groupings frequently looking for advantageous physical matchups for particular plays. Stanford generally has the QB making presnap reads.
Finally, "the QBs have to be around forever before they play" thing is vastly overblown.
Hogan won the starting job as a redshirt frosh.
Chryst won the starting job as a redshirt soph.
Costello won the starting job as a redshirt frosh.
Mills became a starter as a redshirt soph, when he couldn't fully participate before that due to injuries.

It is clear Stanford is moving to a more contemporary NFL offense featuring predominantly 11 personnel; 3WR, TE, RB. No FB.
Even with Mills somewhat limited by knee this year, they did designed QB runs and read options with him. It would seem McKee will be doing more of this in the 2021 offense.

Which school does Costello want to play for next season ?
Regardless of the answer to that question I expect he will have a degree from Stanford and that is a great thing to have.

I kind of doubt it. WSU requires great accuracy. KJ didn't exhibit that reliably. It also requires a QB that can run around and buy time. I am not sure that is KJ's strength. He would do a great job of selecting the correct receiver, IMHO. If he were fully healthy and could move well, maybe. Not sure he will get the chance.

Is Costello a fit for Wazzu? He could pass for 5000 yards in that system.

This, if true, moves it up a notch. Or two. Do I really want our offense to stand solely on David Mills's legs? (Or Jack West's, though I'm sure he's better than his first start.)
Also Tanner McKee.
Not too long ago I read an article about McKee that mentioned that he was fighting hard to keep from losing weight on his mission in Brazil. If that's truly the case, and, more importantly, if he doesn't come back until the fall, I would think that the chances of him contributing significantly his first year are very slim.
McKee is back from his mission in May. 2-3 months is enough time to get back into playing shape before camp, provided that by then Stanford has replaced its current S&C staff with competent people.

the transfer portal currently shows 58 QBs (and more will probably enter as last year showed 123 QBs)
of the 58, it indicates 14 have a transfer destination and 3 are staying at their school,
not sure how accurate those numbers are
there are 130 FBS teams and if they average 3 QBs/team who have either eligibility remaining or who could graduate transfer then that is ~15% of FBS QBs in the portal, if they average 4 QBs/team then ~11% of FBS QBs
if the number rises to last year's 123 then that would become ~32% (3 QBs/team) or ~24% (4 QBs/team)

The CBS Sports analysis of Costello suggests it is a smart move for Stanford to move on from Costello and go with Mills. These are the schools Brady Quinn suggested as possible landing spots for him:
- Georgia (if Fromm leaves for NFL)
- LSU
- Washington (If Eason leaves for NFL)
- Oregon
- Wazzu
- Michigan
- Michigan State
- Miami
This list of schools suggests Costello is thought of very highly in college football circles.

Florida State might not be a bad deal for him either.
New coach with a high powered offense and nobody particularly impressive coming back.

Costello will get interest from several good landing spots. His best option would be a team that expects to be very good next year but is short a QB. I think most of the teams in the above list expect to have some other issues besides QB. If you don't expect to meet or exceed the fan's expectations, it is politically better to do that with a Freshman who you are developing than a transfer who is "one and done". KJ is clearly a very good player, probably the best transfer QB out there AFAIK. However, in his situation, the "up-side" of his abilities doesn't matter. It is next year and only next year. In the "right" situation, he will be great. Let's just hope that situation exists.

I might add Northwestern - which just extended scholie to Stanford legacy C-Richardson - because NW had really poor QB play last season, and I don't think anyone untried is waiting in the wings.

I have this feeling that Costello will end up at Michigan playing for Jim. They haven't had great QB play
for
almost Jim's entire tenure, and Costello would probably be the best QB Jim has had in his 5+ years there.
I think this makes way too much sense. Plus Costello can get a Master's at another strong academic school.
Also Jim needs to win now (particularly against Ohio State). He needs to win big next year to satisfy
a very restless fanbase. No time to waste on developing someone unproven.

Northwestern is a great landing spot for Richardson. Costello can definitely reach higher than NW though.

Arizona had the worst defense in the conference. (Yes, counting us.)
They fired their DC, DL coach, and LB coach literally the day after we hung 41 on them. That's how little respect they believe our offense deserved.
