I don’t follow recruiting in non-revenue sports, but I’ve followed BB and FB recruiting for 20-plus years. In most cases, coaches wouldn’t even accept a commitment until the player was admitted. (I can’t recall if the policy on that varies by coach or changed over time across all sports.) I think I can recall 4 football recruits who were not admitted after committing, one of whom ended up doing postgrad and coming the next year. I can recall one BB recruit who was required to sit out playing for a semester to ensure he’d be able to keep up academically. Recruiting under Harbaugh in 2010 not included as that was a travesty and he apparently used admissions as an excuse for football decisions.
Both sides have made a commitment. Commitment means commitment, not committed until better offer comes along. Your niece will be accepted provided she hits the academic targets. It's that simple. If she doesn't, she will have from June of next year on to find another suitor.
I speak from some authority as a volleyball expert and also had a son graduate this year from Stanford. He accepted his offer in the fall of his sophomore year at age 15 and worked his tail off in the summer before his junior year to crush the ACT and clinch admission.

Congrats to your niece, Farmboy! I’m sure you are very proud. Seems like the best thing is to be honest with other coaches. “Thanks for your offer. School X is a wonderful school, and has a great beach program, but I recently committed to Stanford, contingent on being admitted. I will let you know if I need to reopen my recruitment due to problems with admission.”
I think coaches know the drill with Stanford, and probably would appreciate honesty. They wouldn’t hold a spot open, but if a spot is still available, i doubt they would hesitate to take her.
In the meantime, I hope your niece is working to meet the academic goals. I look forward to rooting for her when she’s here.

Terrific advice! When Tim committed, I was aware that Stanford WVB did not want recruits publicizing their commitments before admission, to spare embarrassing the player who doesn't get in, but I told Tim to tell the world. My reasoning was that he knew what he needed to do in the classroom and on the ACT to be admitted and now he could not slack off. He would have to tell everyone that he was not accepted...I wanted that to motivate him. Turns out he didn't need that. He graduated HS with a 4.2 GPA and got 34 on his ACT.

Well, I just realized who you are. We have the foremost authority in the country on prep volleyball posting on Cardboard. I didn't know it until now.
In hindsight it's easy to give advice about telling the world you are committed to Stanford before being admitted. The problem is not everyone gets admitted. It can be pretty embarrassing to everyone concerned if the student is not admitted. My advice is to take the humbler approach. Most motivated students don't need the fear of future embarrassment to motivate them.
In any event I sure am glad your son went to Stanford. I know he had plenty of options in two sports.

Anna Pringle, 5’10”, 2022, plays indoor and beach for Wave Club in San Diego
Cathedral Catholic High School; 4.57 Weighted GPA
Tuition for CCHS is $20,088/year. If parents can afford this high school, they probably can handle Stanford tuition.

U20 USA lost today to Netherlands. The best USA can finish overall is 5th place. In spite of the loss, Kami Miner continues to be stellar at setting and had some spectacular digs. I believe her talent and enthusiasm will make all of the Stanford players better.

I have read many articles about Stanford beach players and their recruiting stories. They all were talking to various programs other than Stanford. Maybe there is some miscommunication between your niece and someone on the coaching staff.
I have corresponded with many parents of indoor Stanford players through the years. I have never heard of any restriction on a potential recruit talking to other programs.
Your niece needs to have a plan B in the event she is not admitted. By the time admissions makes a decision, almost all, if not all, of the top DI beach programs will have allocated their athletic scholarships. She risks being without a scholarship offer if she doesn't have a back up plan.
I do expect she will be admitted and look forward to finding out her name when the commitment is made public.

Ultimately, that depends on what the coaches meant by "participating in recruiting" (the term used by the OP). In the narrowest sense of the phrase, it might mean that she cannot verbal to another school, which is commonly understood. In the broadest sense of the phrase, it means not talking to another program at all, which seems unduly restrictive. That's why I suggested being candid; other schools know that a Stanford admission is not guaranteed, and would understand that a verbal commitment to Stanford could change because of admissions.

Yes, I can understand the coaching staff telling a recruit not to verbally commit to another school before an admissions decision is made.
Most of the parents of indoor players I corresponded with said their daughters had some sort of backup plan. Almost all of them were honest in telling other coaches Stanford is their first choice and if admitted they will go to Stanford. For the most elite players this works because other coaches were willing to hold a scholarship in the event the player was not admitted to Stanford.

I think it is unlikely. We may see a return of mask mandates, but I doubt we will see a return of the restrictions that were there in the fall and winter, even if the number of cases of COVID continues to climb. 80% of adults in Santa Clara county are fully vaccinated, and Stanford will have vaccination requirements for returning to school.
I hope I'm not eating my words here.
