Difficult to answer pending the various trials, but at the 2016 summer games there were only 18 countries that recorded five or more gold medals, and Katie Ledecky alone is likely to be favored in four individual events and to take part in two strong relays.

The odds of Kerri Walsh Jennings going to another Olympics have become very long.
KWJ and partner Brooke Sweat lost both of their matches in Sochi (FIVB event) and finished tied for 25th. Then the #3 American team won the gold medal to pass them in Olympic qualification points. KWJ/BS would need to medal at the last qualification event (Ostrava, Czechia) next week to retake second place. Oh, and Brooke Sweat is rumored to be injured again.
But Alix Klineman will be representing Stanford and the USA in beach volleyball, assuming the Olympics take place.

I'll be curious to see if Tavita and Kawika Shoji make the Olympic team. They're on the 19-player U.S. National Roster going into the last international competition before the Olympics in June (they were on the 2016 Olympic team). The Shojis are one set of brothers on the team, the other set includes Taylor and Brenden Sander (both of BYU). One of the middles is Garrett Muagututia from UCLA -- you may remember that his brother, Myles Muagututia suited up for Stanford's volleyball and football teams.
Most of the better college teams are represented (with number of players):
Long Beach State - 4
BYU - 3
Stanford - 2
Penn State - 2
Loyola Chicago - 2
UCLA - 2
USC - 1
Ohio State - 1
Hawaii - 1
Irvine - 1
BTW, Stanford's men's volleyball program collected more than $7.7 million in pledges. Stanford's last really good team was in 2014, which lost the national championship match. And a number of their players are in the transfer portal. Near as I can tell, there's only 13 non-seniors on this year's team and
www.middlehitter.com lists zero Stanford commits. This is going to be an uphill battle.

There are going to be zero recruits for most of the 11 sports for next year. There will be rebuilding to do.

The rebuilding has a potential to be done quickly. A consequence of the lack of next year recruits is that Stanford should have a surplus of scholarships for the subsequent class (or perhaps to use for transfers into next year's class as sophomores). If there was a student-athlete that wanted to attend Stanford but had to go to another school because of the (temporary) loss of the program (and thus any scholarship or preferential acceptance at Stanford), they might be interested in transferring.

It may be possible for a lot of seniors to grab coterms and take advantage of the extra covid eligibility year. But now you're talking about altering life decisions/plans to buffer your team through circumstances.
