The limit to scaling quality is availability of beans. If you want to do a large volume business (more than a local storefront and a couple wholesale accounts), you probably have to start blending beans to get a consistent roast, which is what people expect. However, I really like single origin beans for two reasons. The first is that generally they have to be very high quality, because you can't blend away any deficiencies in the taste profile. Secondly, I actually enjoy the unpredictability of single origins. Sometimes it will be very fruity, other times more chocolaty, and sometimes more nutty. Being surprised is kind of fun.
