That's a fair criticism. There are teams like WSU and Texas Tech, and perhaps a couple more (NC State and probably some G5 teams), but these are probably the exception that prove the rule. You are right that most teams don't go too much beyond four or maybe five deep at wide receiver (defined as catching an average of at least one pass per game).
