So why don't we get five Dave DeCastros a year and go ogre almost all the time?  I don't get it.

Because there aren't 5....and rarely one...DeCastros every year. We have two guys who had his HS status or better. They're injured. Not a recipe for success but it's hard to blame recruiting. Except, of course, for the NO DEPTH part. Sheesh!

All right, let me rephrase.  There were 15 All-American linemen last year.  Several prominent free agents as well.  Listed all of them below. NONE went to Stanford.  Wonderlic scores attached, when I could find them.
