I am referring in my post to class size not total number, but 150 to 200 total seems about right. My point being increasing class size by 30 to 40 students would be pretty simple to do and would not require any major building project. This sort of growth has occurred historically as well- 2008-2009 total undergrad population was 6812. By 2014-2015 it was 7018.
My main concern is that axing these "country club" sports seems more to be about reducing the perception of Stanford as a place for privileged students, and I am skeptical that they would be significantly replaced by anything other than other strivers from privileged backgrounds, just ones who don't happen to play high level sports.
