I don't like coffee, but I had a delicious cup on a Costa Rica coffee plantation tour.
The guide fried the beans in a cast iron pan to what would be considered a very light roast.
He told us that if the beans smells good while you're roasting them, you're burning away the oils that make the coffee taste good. He also said that Starbucks has tricked everyone into drinking dark roast which is simply cooking lower-quality beans until they're burnt to make them taste the same.
