I will have more confidence in Chryst when he beats a team with a winning record which he has not done yet.
The issue at hand is neither an analysis of the teams Chryst beat (a phrase I hate in the team sport of football - even for a QB), nor whether anyone has particular confidence in him. The issue is whether there is a better option available. That would be the issue even if Chryst were playing well.
The problem is that it is pretty hard to come to a conclusion without seeing the other guys play, currently. In the past there have at least been enough rumours coming out of camp that gave us some idea (everybody basically knew that Luck would have been the best option in 2008 - lots of comments opinions floated around in the older days).

Except for Luck himself, who supposedly talked JH out of burning his shirt. I will take Luck's word for it, no matter what comments circulated at the time. It may have been he didn't want to get killed behind the line we had back then. Costello is a different case, there is no down side to playing him, no red shirt involved.

The coaches certainly may have made the wrong choice, but at least they do have some relevant information on the matter.
As far as I can tell, the calls for Costello are primarily because nobody has seen him fail yet. I also have a hope he could come in and be a saviour, but the basis for that is mushy. I've only seen him play in some open scrimmages where he didn't look very good, and in the Rice game where he looked smooth but wasn't actually all that accurate (55% completions). But I am really holding on to that "looked smooth" thing.
You are correct that his main advantage is that we haven't seen him fail yet. The "look smooth" thing could be genuine, or it could be due to no pressure because he knows he isn't going to be the "main man". Our main problem at QB this year, and last year, is accuracy. You can call the right play, get an open receiver, get adequate protection, and still throw a bad pass. We have had way, way, too much of that, and I think that is what kills us. If we took what was there, we would be OK. Maybe not great, maybe not National Championship material, but OK. Right now, and most of last year, we can't do that. This is our QB problem. Is Costello more accurate? I have very little data, but the data I have says no.
