They're just making it up as they go, I guess.

The speculation is that this is all due to the insurance companies involved, so my guess is Stanford got a ton of pushback from various parents and then found out that the insurers were fine with it. But who the hell knows, it's been strange and inexplicable.

EDIT: Oh man there's also this: New concession items at Stanford Stadium include: footlong corn dog, spinach artichoke dip with chips, salted caramel pudding, butter cake with Haagen-Dazs, crab cakes, pesto cream penne, ragu bolognese penne, loaded baked potato soup, and smash pea and barley soup.

Our concessions are starting to get weird.
