Take the ferry to the Zoo and/or Manly.

I think I'm the only Aussie on this board, but I'm a Melburnian, not a Sydneysider, so my advice might be pretty biased...
The one thing I'd recommend if you have the time is to take the train up to the Blue Mountains - check out Katoomba or go bushwalking to see the Three Sisters.
I'd also check if there are any interesting concerts on at the opera house one evening (it's not just opera - I've seen several bands perform there over the years).
