I agree that this is one of those "makes sense" transfers. He probably wasn't going to fulfill his dreams at Stanford, so he is looking for greener pastures. That said, could he have been better? Did Stanford recruit the wrong guy or did he simply not develop? Back in 2017, he had a good catch in his collegiate debut against Rice and a few more that season. But he never lived up to his size and billing. What went wrong? Coby Fleener was also a 3-star recruit and became a legendary member of Tight-End U.
He was stuck behind two guys who were the top ranked TE in their respective classes (Kaden Smith and Colby Parkinson), as we have moved towards a more wide receiver focused offense.

Fisk is a devastating blocker and this past season showed he has good hands. Not sure if he can get open downfield though.
I'm also skeptical of switching from TE to DE in your final season. Didn't we try that recently with a couple of players? IIRC it didn't work out very well.
With the apparent lack of depth in next year's roster at several positions, I'm not a fan of moving people to different (new) positions.
On the plus side, Eric Cotton probably contributed more on the defensive line (30 tackles, 4.5 TFL, 3 sacks) than he would have at tight end (that year, we had sophomore Kaden Smith, senior Dalton Schultz, and freshman Colby Parkinson at tight end).
On the minus side, Luke Kaumatule never contributed much at either position (his career stats were 3 catches for 16 yards at TE, and 16 tackles, 2 TFLs and 1.5 sacks at DL).
