Chryst did visit officially on January 10th, 2014 along with just about everyone else on the "Big Visit" for that year. Although he had committed months before (June 2013), why not take advantage of some free meals, some chances to bond with your future teammates and, probably most importantly, a chance to lobby potential future teammates who had not yet pulled the trigger.
According to Scout, Anderson visited January 14, 2011in that year's Big Visit. Anderson had committed almost a year earlier (March of 2010)! It was probably a similar scenario as Chryst, where he took his official visit because, why not, and in order to recruit potential teammates and bon with those that had already committed.
My point was more for the local recruit who was still deciding, and had Stanford plus at least five other schools they were considering. A local who had already committed to Stanford, or had fewer than five other potential schools presumably would take advantage of the official visit (and likely is encouraged by the coaches to do so).
