The easier way is to use either quick or full edit (doesn't matter), put [ s ] before the name (without the spaces around the s!) and put [ /s ] after the name (again without the spaces).  s is for strikethrough.

The result looks like this.

Cal-Berkeley is the best, USC is the best, Stanford is the best.
