I think the visits are also about meeting the other players and coaches in person to see what they are like.  I for one would be unlikely to do all virtual interviewing for a job and accept it without meeting some of the people face-to-face.

I also came to Stanford sight unseen (from Ohio), and the impression it made when I arrived was significantly better than the image I had in my mind

This. I'm another one who came out to Stanford sight unseen, but the information that was germane to my college choice (quality of education, academic reputation) didn't require me to visit in person. However, ff I was going to play power five football I would definitely want to spend time with my future teammates, interact with the coaching staff in person, get the inside scoop from current players as to what the program is like, etc.
