He has two Super Bowl rings without ever being on the active roster for an NFL regular season or playoff game I believe.

I have no idea if Austin Jones will produce Gaffney-like numbers--1709 rushing yards, 5.2 ypa, 21 rushing TDs. As always, it will depend on his teammates, especially the offensive line. But note that in 2020 Jones went for 550 rushing yards, 4.4 ypa and 9 rushing TDs, so it's not out of the realm of possibility.
Comparing the 2013 defense--featuring Shayne Skov plus NFL draft picks Murphy, Reynolds, Gardner, Richards, Carter, Anderson, Parry--with the 2021 defense, on the other hand, is a much more depressing exercise...
It wasn't just the defense. The 2013 offense included Peat, Yankey, Fleming, Montgomery, Gaffney, Hewitt, and Hogan who ended up playing in the NFL and Wilkes and Danser who made all conference teams. That's not counting Hooper, Murphy or Garnett who were young and weren't yet starting (or playing at all in Hooper's case, unfortunately). I don't think we'll see a similar level of achievement from players on offense from the current roster.
