Wikipedia has a good write-up on eating clubs. They go back to the very early days. https://en.wikipedia.org/wiki/Stanford_Eating_Clubs
The destruction of the "L" was a big blow to the eating clubs, but in fairness they were having problems back in the 70's. Their facilities had become very run-down and there wasn't nearly as much of a social aspect to them as previously existed. They also didn't have the economy of scale that the Food Service (old name) had, so their costs were higher. The food generally was better than Stern and Wilbur, but that wasn't saying much. Hours were a problem too, because hiring a staff that would have food available basically all day was difficult. Not enough "customers" to justify it.
