I mean, Saban was always a defensive guy so it would have been weird for him to call the plays. And, maybe because it is much less visible, nobody talks about calling defensive plays, even though alignment, cover scheme, blitz schem, etc are important playcalls.  No idea if Saban did it when he was head coach or if his DC did it.
