Whether it's right or not to me the Wildcat involves (1) direct snap to someone who is not QB in an empty backfield; (2). Motion with timing so that there is a potential fly sweep option; (3). QB stays on the field split wide.
My understanding of the term is that only (1) is needed to make it a wildcat.
(2) is nice to have as it gives the defense more to worry about, but also make the non-QB have to do more QB-like things (decide whether to hand off, and execute the handoff). It's still a wildcat with or without this.
(3) isn't required either, but it lets you run the play (and check in or out of it on the fly) without having to substitute, so it's often seen. One wrinkle I've seen Stanford use is to run wildcat with no QB on the first play of a possession, or maybe right after a timeout, then sub in the QB on the next play.
