I know he wasn't on any team, so it's not like trade limitation would stop him, but I guess I always assumed there was some basic roster freeze for the postseason.

Assuming a team has an open slot on the practice squad, they can sign a free agent at any time (just as Detroit did with Ertz).  If he does well at practice this week, they can elevate him to the 53 man roster in time for the game.  Of course, this would mean removing someone else from the 53 man roster.
